One of my absolute favorite meals Mom used to make for me when I was a kid, Chip Beef over Toast. Loved it. I never learned how to make it growing up and have never attempted it as an adult. A few weeks ago, a virtual scrapping friend of mine posted her recipe and I knew I had to try it. This may not seem like a big deal to most folks, but to me, it was a shot at feeling just a little closer to Mom and obtaining a sense of comfort that I used to know growing up. Work has been tough on me lately and I really needed to feel comforted. To my delight, I found out that yes, I could make this dish and wow, it tasted just like Mom's. I felt that sense of "home" I was craving.
To my delight, Zoe loved this as much as I did. She asked if I could make it for lunches after Ms. Niki's "everyday!". I doubt every day, but I sure will try to do this at least once a week. Dave wasn't so fond of it, but that's fine. We always have PB&J around this house.
